From 1878-1897, J Simon is listed as a part of J Simon & Co., Louisville, KY. Letterheads from this time bear the Ashton Distillery logo.

The 1894-1918 Louisville directories contain a separate listing for Simon Bros. They are known to use several brands, including "Ashton", "Dairy Maid", "Jubilee Rye", "Muldrough Hill", "Old Cambridge", "Old Cambridge Rye", and "Old Joe Wheeler."

J Simon & Son(s) list in St Louis directories from 1900-1918. In 1909, company paper lists Julian Simon, Jacob Simon, Ira Simon, and Herbert Simon, and the Ashton Distillery logo is shown. In 1912, Jacob is no longer in evidence. They were using the "Ashton" and "Old Timbrook" brands, and, in 1900, the Simon & Son directory listing identifies the company as proprietors of Ashton Distillery Co.

The Ashton Distillery Co. lists from 1883-1897 in the Louisville, KY. directory and in the St. Louis directory in 1900.

The Ashton Distillery Co. distillery was located about 12 miles NE of Bardstown, KY. (RD #442, 5th Dist) and was being operated by McClaskey & Son.

The company used the brand names:
"Ashton", and "Old Timbrook."
